Bake and Make Up: Deep Dish Brownie Pizza

In VisionTV’s new series Bake and Make Up, a once inseparable twosome – childhood friends, past loves, long-lost family – are given the chance to reunite and rekindle their relationship through baking. By bringing two people together to create a delicious and personally meaningful dessert, they can find their way back to each other once again.

Kendria and Leslie were “built-in best friends” as children. For all the big life events, Leslie looked to her older sister Kendria to lead the way. But when their Mother passed, followed by Leslie’s husband, a rift began to grow. Leslie still shows her love through food and together, creating their childhood favourite Deep Dish Brownie Pizza, they try to find a way back to being besties.

Make and Bake Up S1E3

Ingredients:

2/3 cup all-purpose flour

3/4 cup unsweetened cocoa powder, plus more for pan

1 Tbsp cornstarch

1/2 tsp salt

1 cup granulated sugar

3/4 cup packed light-brown sugar

1/2 cup unsalted butter, melted

1/4 cup canola oil

3 large eggs

2 tsp vanilla extract

1/3 cup 60% Belgian chocolate, chopped

Whipped White Chocolate Ganache Frosting + Toppings

½ cup whipping cream

1 cup good quality white chocolate, chopped

 Toppings

1/3 cup raspberries

1 kiwi, peeled, halved & sliced

1 can peach halves, drained, patted dry & sliced

¼ cup milk chocolate, melted for drizzle

Edible gold leaf

Instructions:

  1. Preheat oven to 325 degrees Fahrenheit.
  2. In a mixing bowl whisk together flour, cocoa powder, cornstarch and salt. Set aside.
  3. In a large mixing bowl stir together granulated sugar, brown sugar, melted butter and vegetable oil.
  4. Blend in eggs one at a time while adding in vanilla with the last egg.
  5. Add flour mixture and mix just until combined then fold in the chopped chocolate.
  6. Pour batter into prepared pan and spread into an even layer, then wiggle pan to level.
  7. Bake in preheated oven until a toothpick inserted into the center comes out clean (about 20 – 24 minutes).
  8. Remove from oven and set on a wire rack to cool completely.
  9. To make the frosting, heat cream in a saucepan until nearly boiling; pour over white chocolate in a bowl. Let sit for 3 minutes.
  10. Stir until chocolate is completely melted.
  11. Place over a bowl of ice and continue stirring to cool the ganache.
  12. Once cool to the touch and slightly thickened,  whisk ganache until soft peaks form.
  13. Spread ganache over cooled brownie. Cover and transfer to the fridge and chill.
  14. Slice peaches and peel and slice kiwis.
  15. Decorate chilled brownie with fruit just before serving.
  16. Melt milk chocolate in a microwave in 10 second intervals until just liquid when stirred.
  17. Pour melted chocolate into a piping cone and immediately drizzle over the pizza.
  18. Using a craft brush, lightly accent the top of the pizza with dabs of the edible gold leaf.
  19. Slice deep dish brownie pizza and serve.
  20. Enjoy!
